Caramel Pecan Cheesecake from Gerri's Recipes

Ingredients

2 pkg (8 oz) Cream Cheese, softened 1/2 C Sugar 1/2 tsp vanilla 2 eggs 1 graham cracker crust (6 oz or 9 in) 20 caramels 2 tbsp milk 1/2 C chopped pecans

Instructions

MIX cream cheese, sugar, vanilla with electric mixer until well blended; add eggs and mix until well blended. MELT caramels with milk on low heat stirring frequently until smooth, stir in pecans and POUR into pie crust. TOP with cream cheese batter. BAKE at 350 for 40 minutes or until center is almost set. COOL and refrigerate for at least 3 hours or overnight - makes 8 servings
