Ingredients

3 Ripe Tomatoes, Cored, Seeded, and Chopped 3 Small Scallions, Trimmed and Coarsely Chopped 1 Medium Jalapeno Pepper, Cored, Seeded, and Finely Chopped 1 Clove of Garlic, Peeled and Finely Chopped 3/4 Teaspoon of Salt 1/3 Cup Coarsely Chopped Fresh Cilantro OPTIONAL GARNISH: Coriander Sprigs

Instructions

1. In and large bowl, toss all ingredients except chopped cilantro until well combined. Set aside for 1 hour to let flavors mellow. 2. Just before serving, mix in chopped cilantro. Transfer to a serving bowl and garnish with cilantro sprigs.
