Ingredients
1 1/2 lbs thin organic carrots, peeled and thinly sliced (about 4 cups)
salt and pepper to taste
1 tsp sugar
1/3 cup water
1 Tbs fresh lemon juice
3 Tbs butter
2-4 Tbs fine;y chopped fresh basil (or 1 Tbs dried)
Instructions
Place carrots in large saucepan.
Add salt, pepper, sugar, water, lemon juice and butter.
Cover and cook over medium-high heat, shaking pan occasionally.
Cook for 20-30 min or until carrots are very tender, lightly glazed and the liquid has evaporated - taking care to not let them burn
Stir in Basil, taste and adjust seasonings and serve.
