Ingredients
                
                2 large boneless, skinless chicken breast
4 tablespoons lime juice
2 teaspoons olive oil
2 teaspoons minced cilantro
1 cup each spinach, romaine leaves
2 chopped shallots
1/2 cup artichoke hearts
4 tablespoons fat free Italian salad dressing
             
      
            
                
                    
Instructions
                
                1. Marinate chicken breast in first 3 ingredients.
2. Grill or broil chicken breast.
3. Slice chicken breast into 1/4 inch thick strips.
4. Prepare salad using spinach, romaine, scallion, and artichoke hearts.
5. toss with 2 tablespoons fat free Italian salad dressing and top with sliced chicken.
