Chunky Monkey Energy Balls from Ccvanb's Recipes
Makes 24 servings

Ingredients

½ cup creamy peanut butter 1 very ripe banana ½ cup pitted dates ¾ cup uncooked oats (gluten free, if needed), more if needed ¼ cup ground flax seed or flax meal ½ teaspoon vanilla ¼ teaspoon Kosher salt ¼ cup mini chocolate chips (vegan, if needed)

Instructions

Combine all of the ingredients except the chocolate chips in a food processor and process until it forms a paste, adding more oats if the mixture is too soft. Stir in the chips. Using about a tablespoon of the mixture at a time, roll into balls. Store in the refrigerator until ready to eat.
