You can make beef curry by substituting the chicken with beef, and using red curry paste instead of green curry paste.
Ingredients
1. 2-3 lbs. boneless, skinless chicken thighs
2. 1 can coconut milk or 2 cups homemade coconut milk
3. 3 tablespoons green curry paste
Instructions
1. Add chicken, coconut milk and curry paste to the slow cooker. Use a fork to mix in the curry paste.
2. Cook on low for 4-5 hours.
3. Use 2 forks to pull apart the chicken.
4. Use a slotted spoon to remove the chicken from the liquid.
