Wacky Cake (egg and dairy free) from Beverlin7's Recipes

Ingredients

2 cups sugar 3 cups flour* 2 teaspoons baking soda 6 tablespoons cocoa 1 teaspoon salt 2 tablespoons vinegar 2 tablespoons vanilla 3/4 cup oil 2 cups water

Instructions

Mix first five ingredients together in large bowl. Make 3 wells in dry mixture and pour vinegar, vanilla and oil in one of each of the 3 wells. Pour the water over all and mix well. Bake at 350 for 45-60 minutes in an ungreased 9x9 cake pan. (Can also be baked in muffin tins for 25-30 minutes to make cupcakes. Makes 24.) Serve with sweetened whipped cream, if desired. NOTE: To make a vanilla cake, omit cocoa powder and reduce oil to 10 Tablespoons (5/8 cup). *NOTE: This works very well using a gluten free flour blend that contains xanthan gum.
