Creamy Oatmeal with Banana Nut Topping from Ancalimond's Recipes

Ingredients

Creamy Oatmeal 1 cup steel cut oats 1 cup water 2 cups milk Pinch salt 2 tbsp. maple syrup, or to taste 1 tsp. vanilla 1/4 tsp. ground nutmeg, freshly grated 2 bananas, mashed 1 cup yogurt, for topping oatmeal Banana-Nut Topping 1/2 cup slivered almonds, toasted 3 tbsp. crushed banana chips 2 to 3 tbsp. brown sugar 2 tbsp. melted butter

Instructions

Bring water to a boil over medium high heat. Add milk. When mixture comes to a simmer, add oats and salt. Cover and simmer over low heat, stirring occasionally. If you like your oatmeal with a little texture, simmer for 15 minutes. If you like it creamier, simmer for 20 minutes. Let stand covered, for 5 minutes. Stir in maple syrup, vanilla, nutmeg and mashed banana. Transfer oatmeal to 4 serving dishes. Top with a dollop of yogurt and a sprinkle of Banana-Nut Topping. Banana-Nut Topping Combine slivered almonds, crushed banana chips, brown sugar and melted butter.
