Ingredients
1 tablespoon cooking oil
1 small yellow onion, chopped
1 tablespoon fresh ginger, finely chopped
1 teaspoon ground cumin
1 teaspoon turmeric
1/4 teaspoon cayenne
2 tablespoons brown sugar
1 teaspoon salt
1 1/2 cup medium grain rice
3 cups water
1 cup frozen peas
1/2 cup raisins (golden or black)
2 tsp pine nuts (optional)
1/2 cup water
Instructions
In a stovetop pot, heat the cooking oil.
Add the onion and sauté until clear and soft.
Add the ginger, cumin, turmeric and cayenne, and stir until fragrant. Probably less than 1 minute. Do not burn!
Add the brown sugar, salt, rice, and 3 cups water.
Bring to a full boil, then turn the heat to low. Cover tightly and simmer for 10 minutes.
Open lid. Add the peas, raisins, pine nuts, and additional 1/2 cup water.
Re-cover for about five minutes or until rice is tender.
