Makes 12 servings
Ingredients
2 1/2 cups quinoa, dry
5 cups liquid (water, chicken stock, vegetable stock or combination water and stock)
2 mangos, diced
3 tomatoes, diced
1 jalapeno, chopped
1/2 cucumber, diced
2 avocado, diced
1 small onion, diced
2 tsp cumin
2 Tbs olive oil
2 Tbsp lime juice
2 tsp jalapeno Tobasco sauce
1/4 tsp salt
1/8 tsp black pepper
Instructions
Prepare quinoa according to package instructions using your water and chicken/veg. stock. Put in the fridge to chill.
Mix all the rest of the ingredients (mango through black pepper) in a medium to large bowl and chill.
A few hours before serving, mix in quinoa with the rest of the ingredients. Serve cold.
